'Spicer' refers to someone of the trade of spice, a merchant or dealer of different spices used in cooking.

History

It is not known precisely when it dates from, but it would seem to date from the mid-1600s, when spices were used often in cooking, to disguise the fact that meat was becoming unfit to eat. This would be more common in shipping and other long-distance travel, where supplies could not easily be kept in a fit state to eat (because there was no refrigeration)
