barbecuing: transitive verb (sometimes spelling barbequing)
A purist would say this is cooking using indirect heat and/or smoke in some sort of enclosed grilling device, using charcoal (preferred (but often not as convenient as) propane or natural gas) as the heat source. This process may take several hours or longer.
However, it is often used to refer to cooking using direct heat (or flames) directly underneath the food item, with the grilling device either open or closed. The item being cooked is flipped at least once, and is often basted with some sort of seasoning sauce during the cooking process.
This technique may be used with a wide variety of foods including meats, vegetables, fruits, and even items such as BBQ pizza.
