1/2 pound Italian sausage
1/2 cup chopped onion
1 clove garlic, minced
1/2 cup shredded carrot
1/2 cup sliced mushrooms
1 can (15 ounces) tomato sauce
1 cup water
1 teaspoon Italian seasoning
1 cup shredded Cheddar cheese (4 ounces)
1 cup shredded Provolone cheese (4 ounces), or Mozzarella
8 ounces pasta, cooked, rinsed and drained, tossed with butter
In skillet cook sausage with onion, garlic, carrot and mushrooms until carrot is tender, about 10 minutes. Drain off any excess grease. Add tomato sauce, water, and Italian seasoning. Simmer, uncovered, for 15 to 20 minutes. Stir in cheeses until sauce is hot and cheese is melted.
Serve cheese sauce over hot buttered pasta.
