Canja De Galinha A Alentejana (Alentejana Chicken Soup)


Ingredients
3 Pounds Chicken -- Cubed
8 Cups Chicken Stock
2 Medium Onion -- Chopped
1/2 Teaspoon Thyme
3 Tablespoons Cilantro -- Chopped
1 Medium Bay Leaf
1 Teaspoon Salt
1 Teaspoon Pepper
1 Pound Linguica Sausage -- Sliced
1/4 Pound Bacon -- Chopped
2 Cloves Garlic -- Chopped
1 Teaspoon Salt
1 Tablespoon Paprika
1 Can Tomato Paste
1 Cup Red Wine
1 1/2 Cups Rice

Directions
Combine chicken, onions, stock, thyme, cilantro, bay leaf, salt, and pepper. Simmer for 20 minutes. Parboil sausage and bacon for 20 minutes. Drain and add to the soup. Add garlic, salt, paprika, tomato paste, and wine. Simmer for 10 minutes. Add rice and simmer for 30 minutes. Serve.
