Ingredients
2 Pounds Chicken -- In 8 Pieces
1 Teaspoon Ginger
1 Teaspoon Pepper
1/4 Teaspoon Saffron
1 Clove Garlic -- Chopped
1 Medium Onion -- Grated
1 Cup Cilantro -- Chopped
3 Tablespoons Olive Oil
1/2 Teaspoon Cumin
1/2 Teaspoon Paprika
Salt -- To Taste
4 Cups Green Olive
3 Lemon Lemon Juice
4 Cups Chicken Broth
Directions
Place all ingredients except olives and lemon juice into a pan. Cover and simmer for 20 minutes. Add olives and lemon juice, simmer for 10 minutes. Serve over rice.
