Sopon De Frijoles Negros Con Aji Picante


Ingredients
2 Cups Black Beans -- soaked overnight
6 Cups Water
1 Medium Green Bell Pepper -- chopped
2 Medium Onions -- chopped
1 Tablespoon Garlic -- finely chopped
2 Stalks Celery -- finely chopped
2 Medium Carrots -- finely chopped
1/2 Teaspoon Cayenne
3 Large Tomatoes -- finely chopped
1 Cup Dark Beer
1/4 Cup White Wine Vinegar
1 Pound Ground Beef -- browned and drained
1 Pound Chorizo -- browned and drained
Scallion -- for garnish

Directions
In large pot, combine beans and water, bring to a boil. Add pepper, onions, garlic, celery, carrots, cayenne, tomatoes, beer and vinegar. Cover, reduce heat to medium and simmer for 1 hour. Add beef and chorizo and simmer for 1/2 hour. Sprinkle with scallion and serve.
