Ingredients
2 Pounds Pork -- Cubed
3 Tablespoons Olive Oil
5 Large Leek -- Chopped
Salt And Pepper -- To Taste
1 Can Tomato Paste
1 Teaspoon Paprika
1/2 Cup Water
1/2 Cup White Wine
1 Small Onion -- Chopped
1 Small Jalapeno -- Chopped
2 Tablespoons Parsley -- Chopped
Directions
Saute meat in oil unitl browned. Add leeks, saute for 3 minutes. Add salt, pepper, tomato paste and paprika. Saute for 2 minutes. Add water and wine. Bring to a simmer and simmer for 45 minutes. Sprinkle with onion, jalapeno and parsley and serve over rice.
