2 cups grated sharp cheddar cheese
1/4 c (1/2 stick) butter, softened
2 Tbsp hot chile powder (New Mexico, if possible)
2 Tbsp onion, finely minced
2 Tbsp jalapeno or habanero chiles, finely minced
1 c flour
2 Tbsp milk
1/4 tsp salt (optional)
To prepare the pastry:
Combine cheese, butter and chile powder. Mix in jalapenos until evenly distributed. Mix in flour and milk. Roll out pastry to 1/4" thick.
Cut pastry into triangles big enough to wrap around any of the following fillings:
Cooked shrimp
Large pimento-stuffed green olives, drained well
Cooked chorizo meatballs
Large black olives, pitted
Lil' Smokies (small cooked sausage links)
Pecan halves
Place on ungreased baking sheets and bake at 375 for about 10-12 minutes. Makes around 3 dozen.
